Rabri (Thickened milk)

Rabri is a beautiful delicacy, with cream collected from reducing the milk. Basundi is a lighter version. Rabri is enjoyed with jelabi. Sometimes condensed milk is added for the recipe.

INGREDIENTS

  • Full fat milk - 6 cups

  • Sugar - 1/3 cup or condensed milk - 1/2 can

  • Cardamom powder - 1/8 tsp

  • Almond - 10

  • Cashew - 10

  • Pistachio - 10

DIRECTION - stove top

Start by soaking saffron, microwave almonds for 1 min with water covered. Let it sit on the counter until it comes to room temperature.

In a heavy bottom pan, start by boiling milk, then lower the temperature to low and keep stirring occasionally until the milk is reduced to half.

Peel almonds and roughly chop all the nuts. Then add it to the reduced milk

At this stage if condensed milk is used add them (adjust to taste) or add sugar and mix well.

Keep separating the cream to the sides. In 1 hour the milk should have thickened to desired consistency.

Finally garnish with saffron and pistachio and chill it before serving.

DIRECTION - INSTANT POT

Start by boiling milk in yogurt mode and when it reaches boiling, turn on slow cook mode on high for 4 hours. Let is simmer while stirring occasionally. After 2 hours add nuts and sugar and continue cooking. Serve chilled.
